Our dry-aged steaks are crafted through a meticulous 30-day process in a temperature- and humidity-controlled cooler. This technique concentrates flavor and tenderizes the beef, producing a nutty, earthy richness unlike standard wet-aged cuts. After aging, each steak is hand-trimmed to deliver a premium, melt-in-your-mouth experience—an indulgence few restaurants in the region prepare fully on-site.

Wagyu beef is celebrated worldwide for its exceptional marbling, which enhances both flavor and tenderness while offering a healthier fat profile. At Gio’s Prime 26, we feature Durham Ranch Wagyu, raised naturally at Strube Ranch in Texas. This beef delivers unmatched succulence and depth of flavor, raised without hormones or growth-promoting antibiotics and finished on a vegetarian diet.
